I have been on the Keto diet for 3 months now and now I clearly understand why this diet is called a lifestyle and not a diet. For my understanding of diet was always where you ate less, ate a lot of healthy but sometimes not so exciting food and went around half hungry all the time. Well that for sure is not the case in Keto diet. The variety of food available and permitted in a Keto diet is vast and versatile; you can eat anything as long as it is not sugar or carbs. Trust me, Fats and Proteins make up for it and once you have wrapped your head around the fact that carbs are not allowed; you never really feel their absence.
So I eat a lot of fats and sufficient proteins now and feel satiated for longer. And though I have come to realise that it is best to keep it simple and use food only as a source of fuel to get the best results; I also try to find simple yet tasty ways to prepare the same chicken and butter in a variety of ways. Keto Spinach Cream Chicken
My Top 10 Best Keto Diet Recipes
This one is a creamy comfort food which is easy enough for me to prepare after I come back from office. It contains my fav vegetables spinach and cauliflower, proteins in the form of chicken and enough fats. You can always increase or decrease the amount of fat to suit your own macros. Remember everyone’s macros will be different as per their body and weight. To loose weight on the Ketogenic diet you need to keep yourself in calorie deficit and achieve your fat macros.

So here goes :
Prep Time : 5mins
Marination time : 15 mins
Cooking time : 10 mins
Serves : 2
Ingredients :
For the chicken
Chicken boneless pieces ( leg or thigh meat) – 100 gm
Olive oil – 2 tbsp
Cumin Pd – 1 tsp
Coriander Pd – 1 tsp
Rock salt – 1 tsp
Ginger Garlic paste – 1 tsp
Chicken Masala – 1 tsp
Cayenne Pepper – 1 tsp
Garam Masala Pd – 1/2 tsp
Olive Oil for frying
For the Sauce
Spinach cut and blanched – 3/4 cups
Cauliflower florets – cut and blanched – 3/4 cups
Amul Cheese Cube – 1.5 cubes
Cream Cheese – 2 tbsp
Heavy Cream – 1/2 cup
Black Pepper
Butter – 2 tbsp
Method My Top 10 Best Keto Diet Recipes :
- Wash and dry the chicken
2. Marinade with all the spices and leave aside for 15 mins
3. Heat the oil in a pan and place the chicken pieces on it. Do not over crowd
4. Let it cook properly on one side and then flip each of the piece over
5. Once the chicken pieces are cooked properly and are white now, take them off the heat
Tip: I put in a dab of butter or home made ghee before taking the chicken off the heat. The chicken pieces get a beautiful brown sizzle with the frying in butter
Tip: you can also grill the chicken pieces if you would prefer a less oily version. Baste the chicken in olive oil before putting it in to grill

For the creamy Spinach Sauce
1. Blend the blanched spinach and cauliflower florets to a smooth paste.
2. Add a tsp of olive oil on pan and put in the butter
3. Add the spinach and cauli paste
4. Cut up the cheese cube and add
5. Add the cream cheese
6. Sprinkle some pepper and salt as per taste
7. Use a flat spatula and just give the sauce a good whisk
8. Keep moving the sauce around for a minute ; your cheeses should be melted by now
9. Add the chicken pieces and let it cook for a minute tops
10. Add the heavy Cream; mix and take off the heat
11. Add water / more cream as per desired consistency
Serve hot with a spring of parsley on top
Tip: Add a green chilly in while blending the spinach and cauliflower if you want a bit of kick and heat in the dish

Give this a try for sure, and if you are on a Keto diet , eat as per your macros for the day. But I believe as long as you don’t over eat and don’t cross your daily Carbs intake of 20 gms, you are in a happy Keto place. Slowly I have come to understand my body and my diet and almost know what to eat by default. Counting calories is very much required in the beginning at least but it becomes much simpler once the body gets fat and Keto adapted properly.
