I think I am in love with Cauliflower now since I started my Ketogenic diet. I had no idea this vegetable could be so versatile. There is a whole world out there (Keto world) which has so many cauliflower dishes ?. I have heard of a cauliflower dessert though I am probably not gonna try that one anytime soon. As of now, my favourite and easiest dish is Keto Cauliflower Rice which I can whip up in a jiffy. It’s almost like our good old Poha I would say and can be eaten even if you are not on Keto. ??♀️ That is why I absolutely love the Keto Cauliflower Rice
?You can even substitute Keto Cauliflower Rice for your regular rice if you are looking to reduce carbs and calories ?
?Cauliflower is rich in fibre, Vit K , C and antioxidants. You can try this Keto Cauliflower Rice if you are on Paleo / Keto / Low Carb diet or even if you just are looking to reduce the processed carbs in your meals and trying a little detoxification ?

Here is how I love to prepare my Keto Cauliflower Rice. do try if this is something new to you & tag me if you like it

Cauliflower- 1 whole head
Ginger paste – 1/2 tsp
Garlic minced – 2 tsp
Onion Minced – 1/2
Chicken / Vegetable Broth – 1/4 cup
Butter – 2 tbsp
Olive oil – 2 tsp
Optional – 2 chicken or Chorizo sausages
Method for making Keto Cauliflower Rice
? Take a whole head of cauliflower, wash and dry and cut up into large florets
? Pulse the florets in a food processor on medium speed till you get to almost rice grain size. A cous cous grainy consistency is ok
? Take some olive oil and butter in a flat wok.
? Add some miced garlic, 1/2 tsp of ginger paste, 1/2 minced onion, 1 green chilli
? Optional:- add cut up 2 sausages, you can avoid this if you want to
. ?Sauté this for a min, add the cauli and let it fry
?Add a pinch of turmeric, salt & cayenne pepper
? After some time add Vegetable or chicken broth around 1/4 cup. I use chicken stock for this
?Cover and let cook for a few mins till the cauliflower is completely mushy and cooked
?Sprinkle some fresh parsley and serve hot ?
There are many variations you can try with this Keto Cauliflower Rice and the masalas like adding a bit of mustard seeds or Cumin or adding shredded Parmesan in the end.
