Cous Cous is an extremely light and healthy option which can replace Rice or pasta in a meal. This staple of North African diet consists of Tiny, steamed and dried granules of semolina. Easily found in markets nowadyas, the pre cooked variety are very easy to cook. Just add it to some boiling chicken or vegetable stock and cook for 5 minutes.
Ingredients:
Precooked variety Cous cous -1.5 cups
Chicken/vegetable stock -1.5 cup
Water – 1.5 cup
Salt – to taste
Pepper corn – 5,6
Garlic Cloves – 6 chopped
Baby corn – 3
Bell peppers -1 green 1 red
Baby carrot -1
For Garnish :
Spring onion stalks -2/3 finely chopped
Sausage chicken ( optional) – sauteed lightly in butter
In a large pan saute the garlic once lightly browned add the vegetables and cook for a few minutes.
Now add the stock and water and let come to a boil. If you want, you can use stock only, or just boil in water, else you can use half stock and half water.
Add 1 tsp of white vinegar / 2 tsp lemon juice.
Once it comes to a boil add the cous cous and cook for 5 mins
Keep stirring, you will see the cous cous becomes fluffy and increases in volume
Add more water if required
The ratio is 1.5 cups of stock/ water to 1 cup of cous cous
Remove from heat and spread in a large plate.
Garnish with sausage and chopped spring onions
I add a variety of vegetables/ sausages etc to make it more interesting. It is a great accompaniment to a variety of dishes.
