When you have a kid suddenly food and cooking becomes a challenge. You go to a super market and you see evil ingredients staring down at you from the aisles, Ā proceesed food, packaged ? food, msg, chemicals, gluten and what not. Healthy food choices are not a choice anymore they become a necessity.
Now one thing i have always loved is baking and I always dreamed that I will be a mini Martha Stewart and dole out perfect ? recipes for my little one. But the fact is kids are picky eaters and also while cooking for them you have to be extra careful to keep it as healthy as possible. This means removing all purpose flour ( maida ) from the kitchen and that poses a huge problem because well it is kind of the central ingredient in baking.
So when I am able to replace this with a healthier and more easily digested whole wheat flour ? and the result is as good as this, I am super ?.Ā
These banana muffins are the perfect snacks for evenings when the baby comes back after playing. They are not too sweet and super fluffy. Also the added goodness of bananas, nuts and whole wheat mean that I am also on cloud nine.
Ingredients:Ā
Whole wheat flour – 2 cups / 400 gms
Banana- 3 ripeĀ
Baking powder -1 1/2 tsp
Cinnamon powder – 1 tsp
Salt – 1 pinch
Eggs – 2 large
Unsalted Butter – ( melted) – 150 ml
Milk – 100 ml
Castor sugar – 1/2 cup / 100 gms
Cashew, Almonds or any nuts of your choice, ground to powder – 1/8 cup
Mix the flour, baking powder, salt, cinnamon powder in a big bowl.
In another bowl, whisk 2 large eggs
Mix in the mashed banana
Now add the milk, melted butter
Add the vanilla essenceĀ
Mix the powdered nuts to the sugar and add to liquid ingredients
I blitz the nuts in a mixer to a powder ( almonds and cashews ) because my lo is too small to chew but you can actually add chopped nuts to the mix instead of powdering them
Fold the wet ingredients into the flour mix gently
Do not over mix
The batter should not be too runny but a bit thick, if you think it is too thick you can add a little more milkĀ
Grease a muffin tray and preheat the ovenĀ
Now bake at 220 degrees for 20/22 mins or until a toothpick comes out clean when inserted in the middle
This mix should roughly give you 15 muffins
Store in a cool dry place and enjoy snack time ?
