Cajun Potatoes

One of our favourite vegetarian starters at a famous barbecue grill buffet restaurants is Cajun Potatoes and that is one Potato dish we do not shy away from eating whenever we visit that place. The truth is you can not really avoid Potatoes and it is one staple item in the kitchen which lends itself to almost every cuisine and makes it a happy event. Potatoes are tatsy and well they worth their weight ūüėČ however concererned you may be about your calorie intake, you make a concession for potato.

Since we really love the Cajun Potatoes I tried my hand at replicating this particular favourite of ours and it turned out pretty good. It is pretty easy too and is a sure fire crowd pleaser.

Cajun Potato  ingredients :

Baby Potatoes – 500 gms

Olive Oil – 2 Tbsp

Garlic Cloves (chopped finely) – 10-12 pods

Oregano – 2 Tsp

Dried Basil – 2 Tsp

Salt – as per taste

For the Garnish:

Classic Mayonnaise – 3 Tbsp

Thousand Island dressing – 2 Tbsp

Fresh Cream – 2 Tbsp

Red Chilly Sauce – 1 Tbsp

Chilli Flakes – 2 tsp

Chopped Onions & Coriander – 2/3 tbsp

Wash the baby potatoes thoroughly and remove any soil etc from the peel. Par boil the potatoes with the peel and ensure that they are not over cooked and completely mushy. It should not be as boiled as for making mashed potatoes, but you should be able to crush them slightly when you press it with your palms.

let them cool and drain the water. Now, press each potato with the base of your palm to crush it slightly. Keep it in a big bowl and add Olive oil, Salt, Oregano, Basil, and Garlic cloves. Toss the potatoes and let the marinade cover all the potatoes properly, you can use a zipolac bag too.

Now, fry the potatoes in an Air fryer for 20 mins at 200 degrees. I use the air fryer as I feel it uses the least amount of oil without drying the potatoes.

If you have a Grill pan and grill them on both sides. The potato peels should be slightly crispy and browned.

If you have an Oven then do not boil the potatoes, but clean them and pierce them all over with a fork, toss them them in the marinade. Preheat the oven at 180 degrees and bake the potatoes for 30-40 mins, till they are done.

Now mix all the sauces for garnish together and toss the potatoes once again in them. Garnish with chopped Onions and Coriader.

Enjoy with a cup of tea on a rainy day.
